For me, snow means not just winter, but mostly Christmas holidays. And because we didn't have white Christmas and saw first and last snow in November, I was content with our ( almost) snow less winter :) I guess I can not, in the middle of January, get surprise, by a snowfall. And so it happened at the beginning of the week, temperature dropped below zero, green grass is gone, and this is how are yard looked this morning.
K zime patri nejenom snih ale take jidlo, ktere zasyti a uspokoji tzv. comfort food. Varim rada a dobre ( v mych letech a hlavne v tomto pripade se uz nemusim stydet za samochvalu :)) Tady je jeden z mych "co je po ruce " receptu.
Naporcovane kure (nebo jakekoli kureci casti) osmahneme na olivovem oleji se strouzky cesneku (klidne celou palickou) a cibuli, nakrajenou na velke kusy- osminky, "po ruce" byla cervena. Pridame nejradeji cerstve ( susene jsou samo sebou take fajn) bylinky. Bazalku, rozmarinku, dobromysl obecnou - neboli oregano, bobkovy list, osolime, opeprime a ted to nejdulezitejsi, co prida na vuni a chuti. citron. Ja doporucuji bio, protoze do pekacku prijde cely i s kurou. Rozkrojim, jednu pulku vymackam na kure a z druhou, nevymackanou polovinou nakrajim na dilky a pridam k masu. Vse jeste rychle osmahnu podleju troskou vody a dusim. Casto kontroluji a dolevam vodu. Protoze byl pekacek plny, pockala jsem az se maso trosku "srazi" a pridala jeste na kostky nakrajenou zlutomasou dyni. Kdyz je kure hotove, dam chvilku zapect do trouby aby cele jidlo dostalo krasnou zlatavou barvu . Dobrou chut!
To me winter also means comfort food and I love cooking and am a good cook ( yes, at my age and in this case I can brag :)) Here is one of my recipes. Chopped up whole chicken or any chicken parts you prefer. Fry in olive oil with cloves of garlic and veges of onion. I had red one on hand. Add preferably fresh herbs
( dry will do ) basil, oregano, rosemary, bay leaves,salt, pepper, and in this case I will insist, organic lemon. And that's because is going in with the skin. Cut it, squeeze half on the chicken, then cut with the other half into wedges and add all to the pot. Add little bit of water and simmer slowly. I also added cubed butter squash when the meat shrank a bit and there was more space in the pot. When the chicken's cooked put it in the oven under the broiler for a bit just to give it that nice roasted look. Enjoy.
